This delicious vegan recipe is gluten-free and works great as breakfast, snack or dessert. In addition to the delicious flavor of strawberry and banana and protein from the quinoa, both pumpkin and flaxseeds are included in these bars. Strawberry Banana Quinoa bars

Ingredients

Makes 9 bars

  • 2 cups of cooked quinoa
  • 2 mashed bananas
  • ¼ cup of pumpkin seeds
  • ¼ cup of ground flaxseeds
  • 1 tsp of vanilla extract
  • ¼ cup of granulated monk fruit or stevia
  • ½ cup of strawberries for topping.

Instructions

Method

  1. Preheat the oven to 350 F.
  2. Mix all the ingredients until fully incorporated.
  3. Spread the batter in a 8×8 silicone baking dish.
  4. Top with strawberries
  5. Bake for 22 minutes, cut into 9 pieces and enjoy!
