Raspberry Vanilla Vegan Ice Cream

Craving ice cream? This vegan ice cream uses soft tofu to create the creamy texture without dairy. Tofu is high in plant-based protein, so this ice cream will keep your blood sugar levels stable and fill you up. Raspberries provide antioxidants, fiber and flavor. You can use stevia, monk fruit or honey (if you don’t have diabetes) to sweeten this recipe.

Ingredients
Serves 1
- 1 block of organic soft tofu
- 6 packets (or 6 tsp) of stevia, monk fruit or sweetener of choice
- 1 tsp of vanilla extract
- ½ cup of fresh raspberries
Instructions
- Blend the tofu with stevia and vanilla extract, transfer to a bowl and freeze overnight.
- Scoop and serve with raspberries.
- Enjoy!
