Plum Oatmeal Banana Bars

These chewy bars are a gluten-free, vegan and low sugar alternative to conventional store bought bars. Oats provide soluble fiber, a form of fiber that feeds our “good” gut bacteria and may also reduce cholesterol. Many of us are aware that bananas are high in potassium, but they also contain a good amount of vitamin B6, vitamin C and antioxidants.The natural sugars and fiber in bananas and plums provide the body with energy, making these bars a great pick me up before a workout or on a hike.

Plum Oatmeal Banana Bars

Ingredients

Makes 6 bars

  • 1 cup of oats
  • ⅓ cup of oat flour
  • ⅓ cup of granulated monk fruit or calorie-free sweetener
  • 1 tsp of vanilla extract
  • 2 sliced bananas (heated in the microwave for 90 seconds)
  • 2 chopped plums

Instructions

  1. Preheat the oven to 350F.
  2. Mix all the dry ingredients in a bowl and then mix in the wet ingredients and half of the plums.
  3. Spread the batter in a loaf silicone baking dish and top with leftover plums.
  4. Bake for 35 minutes, cut into 6 pieces and enjoy!
