This simple salad gets its flavor from fall produce – pears and beets! Pears are a great source of fiber, vitamin C, and copper. Pecans and pistachios balance out the nutrition content of this salad by adding healthy fats. This salad will please your taste buds and nourish your body!

Fall Pear and Beet Salad

Ingredients

Serves 2

  • 4 cups of mixed greens 
  • 1 pear
  • ½ of 1 roasted or canned beet
  • 2 tbsp pecans
  • 2 tbsp pistachios
  • Optional dressing: extra virgin olive oil & vinegar

Instructions

  1. Divide the lettuce among 2-4 bowls.
  2. Slice the pears and beet. Divide evenly among the bowls.
  3. Optional: Add olive oil for a light dressing and/or your choice of protein.
  4. Enjoy!
