Cinnamon Fig Oat Bites

Easy and delicious snack bites using powdered peanut butter, a low-fat alternative to regular peanut butter that provides more plant-based amino acids and fiber. Figs and cinnamon amp up the nutrients and flavor of this simple recipe. These bites are perfect for quick energy before or after a workout due to their combination of carbohydrates, fiber and protein.

Ingredients
Makes 18 bites
- 1 cup of rolled oats
- 1 cup of peanut butter powder
- ¾ cup of dried figs
- ½ cup of granulated monk fruit
- 2 tbsp of cinnamon
- ½ cup of water
Instructions
- Place the figs in a mug, add about ½ cup of water and microwave for 2 minutes, and let it cool down to get them fully soft. Drain the water.
- Mix all the ingredients in a large bowl until fully incorporated (you can use a mixer or your hands).
- Scoop 2 tbsp of the mix per bite, roll into a ball and place on wax paper.
- Freeze for a couple of hours.
- Enjoy!
