Ahi Tuna Guacamole with Chile Poblano Salad

A quick, delicious and nutritious tuna salad that works great for lunch or dinner. Avocados are incredibly versatile and can be used in both sweet and savory recipes to add creaminess or as a main ingredient; for example – the guacamole in this recipe. In addition to the healthy fats provided by the avocado, ahi tuna contains a good amount of lean protein which will keep you full. This unique recipe packs a flavorful punch with Mexican-inspired ingredients like roasted poblanos.

Ahi Tuna Guacamole with Chile Poblano Salad

Ingredients

Serves 1-2

  • 1 cup of sliced sushi grade ahi tuna (this part is really important!)
  • 1/2  tsp of sea salt*
  • 1 tbsp of red pepper flakes
  • 1  tsp of garlic
  • ⅛ tsp of black pepper
  • 1 tbsp of coconut aminos or low sodium soy sauce*
  • 1 lime
  • ¼  cup of chopped roasted poblanos
  • ½ cucumber, chopped
  • ¼ cup of guacamole

*leave these ingredients out if you have high blood pressure.

Instructions

  1. Wash and chop the vegetables and set aside.
  2. Mix the tuna, squeeze the lime and the rest of the ingredients.
  3. Mix well. Serve on tostadas, with chips, or eat by itself.
  4. Enjoy!
