Plum Oatmeal Banana Bars

These chewy bars are a gluten-free, vegan and low sugar alternative to conventional store bought bars. Oats provide soluble fiber, a form of fiber that feeds our “good” gut bacteria and may also reduce cholesterol. Many of us are aware that bananas are high in potassium, but they also contain a good amount of vitamin B6, vitamin C and antioxidants.The natural sugars and fiber in bananas and plums provide the body with energy, making these bars a great pick me up before a workout or on a hike.

Ingredients
Makes 6 bars
- 1 cup of oats
- ⅓ cup of oat flour
- ⅓ cup of granulated monk fruit or calorie-free sweetener
- 1 tsp of vanilla extract
- 2 sliced bananas (heated in the microwave for 90 seconds)
- 2 chopped plums
Instructions
- Preheat the oven to 350F.
- Mix all the dry ingredients in a bowl and then mix in the wet ingredients and half of the plums.
- Spread the batter in a loaf silicone baking dish and top with leftover plums.
- Bake for 35 minutes, cut into 6 pieces and enjoy!
