Avocado Strawberry Mousse

We typically think of avocados as a savory food, but their neutral flavor and creamy texture also makes a great base for desserts like mousse! Avocados are a good source of micronutrients such as B vitamins, potassium and carotenoids. Their high fat and fiber content promotes fullness. The strawberries and cocoa powder add more fiber, antioxidants and flavor. This delicious and creamy dessert is low-carb, gluten-free, and vegan. All you need to make it is a blender.

Ingredients
- 1 small avocado, frozen (peeled and pit removed)
- 1 cup unsweetened almond milk
- 2 tbsp stevia or monk fruit
- 1 tbsp Dutch-process cocoa powder
- ⅔ cup frozen strawberries
Instructions
- Place all ingredients in the blender, leaving a few strawberries for later. Blend until there are no lumps left.
- Serve in a cup or glass and top with the leftover strawberries.
