Turkey Sage Breakfast Casserole

This tasty breakfast casserole makes a perfect meal for 2. Plus, it’s packed with over 60 grams of protein per serving, and it’s gluten-free! Protein is essential for every cell in our body, and it plays a huge role in muscle maintenance and growth if that’s your goal. Protein also digests slowly, so a serving of this will leave you feeling satisfied for a few hours. What’s not to love?

Ingredients (serves 2-3)
- 1 lb of 93% lean ground turkey
- 2 tbsp of chopped fresh sage
- 1 cup of kale
- 1 tsp of garlic
- ⅛ tsp of black pepper
- ½ tbsp of Italian herbs
- 1 cup of egg whites
- 1 whole egg
- ½ tsp of garlic
- ⅛ tsp of black pepper
- 1 cup of steamed chopped brussels sprouts
Method
- Preheat the oven to 350F.
- Wash and chop the brussels sprouts and kale.
- In a non-stick skillet over medium-high heat, start cooking the sage, brussels sprouts and kale for 4 minutes.
- Add the ground turkey, 1 tsp garlic powder, ⅛ tsp black pepper and the Italian seasoning. Use a spatula to break up the turkey and combine the seasonings. Cook until the turkey is no longer pink inside.
- Mix 1 cup of egg whites, 1 whole egg, remaining garlic powder and black pepper.
- Transfer the egg mixture to a lightly greased baking dish. Top with brussels sprouts and cooked turkey mixture.
- Bake for 30-35 minutes.
- Let it cool down and enjoy!
