Tomato Bean Pasta Salad

This recipe is fresh and very easy! Feel free to use legume-based pasta to add more plant-based protein, mineral content and fiber to this dish. It works as a perfect side dish or main meal for your weekly meal prep!

Ingredients
Serves 1
- 2 cups of chickpea pasta (cooked)
- ½ cup of chopped cherry tomatoes
- 2 tbsp of chopped parsley
- ¼ chopped onion
- ½ cup of cooked navy beans
- 1 lemon (optional)
Instructions
- Cook the pasta in boiling water for 8 minutes, or until al dente.
- Meanwhile, prepare the other ingredients: wash and chop the tomatoes, parsley and onion, and open and drain the can of navy beans.
- Drain the pasta.
- Mix all the ingredients in a bowl.
- Serve and enjoy! You can also add some oil & vinegar or Italian dressing if desired (this will change the nutrition content).
