Tomato Bean Pasta Salad

This recipe is fresh and very easy! Feel free to use legume-based pasta to add more plant-based protein, mineral content and fiber to this dish. It works as a perfect side dish or main meal for your weekly meal prep!

Tomato Bean Pasta Salad


Serves 1

  • 2 cups of chickpea pasta (cooked)
  • ½ cup of chopped cherry tomatoes
  • 2 tbsp of chopped parsley
  • ¼ chopped onion
  • ½ cup of cooked navy beans
  • 1 lemon (optional)


  1. Cook the pasta in boiling water for 8 minutes, or until al dente.
  2. Meanwhile, prepare the other ingredients: wash and chop the tomatoes, parsley and onion, and open and drain the can of navy beans.
  3. Drain the pasta.
  4. Mix all the ingredients in a bowl.
  5. Serve and enjoy! You can also add some oil & vinegar or Italian dressing if desired (this will change the nutrition content).
