Strawberry Cheesecake Oats

A simple and delicious antioxidant and fiber rich breakfast or snack, these oats feature cottage cheese – a great source of calcium, probiotics and 16 grams of protein! This is a creamy, low sugar breakfast or snack option with a delicious “cheesecake” twist.
Ingredients
Serves 1
- ⅓ cup of gluten-free oats
- 3 tbsp of granulated monk fruit
- 1 tsp of vanilla extract
- ¾ cup of unsweetened almond milk, heated in the microwave for 1 1/2 minutes
- ½ cup of low-fat cottage cheese
- ½ cup of chopped strawberries
Method
- Mix the oats with monk fruit, vanilla and hot almond milk.
- Microwave for 1 1/2 – 2 minutes until fluffy.
- Top with cottage cheese and strawberries, enjoy!
