Turn your chicken into this easy, show-stopping Indian inspired dish, using a simple process and wholesome ingredients. Did you know that traditional Indian spices – like turmeric and garam masala – are rich in antioxidants? Garam masala is typically a mixture of the following spices: black pepper, cardamom, cinnamon, cloves, coriander, cumin and nutmeg. These spices have anti-inflammatory properties. Spicy Butter Chicken

Ingredients

Serves 5

  • 3 lb of chicken breasts 
  • ¼ chopped large onion
  • ½ cup of chopped cilantro
  • 2 tsp of garam masala powder
  • 1 tsp of turmeric powder
  • 1 tsp of garlic
  • 1 tbsp of dried onion flakes
  • ½ tbsp of red pepper flakes
  • 1 cup of tomato puree
  • 1 cup of unsweetened coconut milk
  • ½ cup of brewed ginger tea (unsweeteened)

Instructions

  1. Cut the chicken into 1×1 inch cubes.
  2. Place chicken in your pressure cooker (Insta Pot) along with the rest of the ingredients.
  3. Stir well and incorporate all the ingredients with a spoon.
  4. Pressure cook in HIGH for 19 minutes. Or cook on the stove top covered for 18-20 minutes on medium heat.
  5. Serve with rice, baked potatoes or salad. Enjoy!
