Papaya Cucumber Salad

This recipe is an easy, nourishing cucumber salad with papaya, a fantastic source of vitamin C. Vitamin C supports immunity, skin health, protein metabolism and is a powerful antioxidant. Cilantro, honey and feta cheese add even more flavor.
Ingredients
(Serves 2)
- 2 large cucumbers
- 3 cups of chopped papaya
- 1 tbsp of honey or sugar alternative
- ¼ cup of chopped cilantro
- 2 tbsp of low-fat feta cheese
Instructions
- Peel and chop the cucumber and papaya. Chop the cilantro.
- Mix all the ingredients in a salad bowl.
- Serve with your favorite lean protein and enjoy!
