Mango Crunchy Crab Salad

Not every salad has to include lettuce! This recipe doesn’t require any cooking, making it a quick option for lunch or dinner. Serve over baked tostadas or whole wheat crackers (not included in nutrition analysis). If you are looking for a healthy snack or meal, this is perfect!

Mango Crunchy Crab Salad

Ingredients

(Serves 4-5)

  • 2 cup of chopped crab meat
  • ¼ cup of finely chopped red onion
  • ⅓ cup of chopped celery
  • ¼ cup of chopped cilantro
  • 1 cup of chopped of mango
  • 3 limes (the juice)
  • ⅛ tsp of black pepper
  • ½ tsp of ginger
  • Baked tostadas for serving

Instructions

  1. Wash and chop the vegetables, cilantro and mango. If using canned crab, drain any liquid. If using fresh crab, chop into small pieces. You can also use imitation crab (surimi). 
  2. Mix all the ingredients in a large bowl. Squeeze the limes over the top.
  3. Serve over baked tostadas or whole wheat crackers.
  4. Enjoy!
