Jicama and Fruit Salad

Easy, fruity and hydrating! This combination of crunchy jicama and naturally sweet fruit is refreshing and delicious. Not to mention you’ll be getting 9 grams of fiber and plenty of essential vitamins, minerals and antioxidants. Works great as a snack or part of a balanced breakfast!

Ingredients
(Serves 4)
- 3 cups of chopped jicama
- 2 cups of chopped mango
- ½ cup of pomegranate arils (seeds)
- 2 chopped kiwis
- 2 limes
- 2 packs of stevia
Instructions
- Wash, peel and chop the jicama, mango and kiwi.
- Remove the seeds from the pomegranate by cutting the pomegranate in half. Over a bowl, hold the pomegranate with the seeds facing the bowl and gently tap with a wooden spoon. The seeds should fall into the bowl. Measure out ½ cup (or more if you prefer).
- In a separate large bowl, add all of the ingredients, including juice from the limes and stevia.
- Serve and enjoy!
