Feta & Sun Dried Tomato Spaghetti Squash

This is an easy, elegant and healthy side dish for your lunch or dinner. It’s made with simple ingredients and a lovely touch of sun dried tomatoes and low fat feta cheese. Spaghetti squash and tomatoes are high in vitamin C and antioxidants – both of which may improve inflammation in your body.

Feta Sun Dried Tomato Spaghetti Squash

Ingredients 

(Serves 4)

  • ½  of cooked and shredded spaghetti squash
  • 1 steamed and chopped zucchini
  • ¼ cup of sun dried tomato
  • ¼ cup of low fat feta cheese
  • ⅛ tsp of black pepper
  • ½ tsp of garlic
  • 1 tbsp of dried parsley 

Instructions

  1. For the spaghetti squash, slice it in half, remove the seeds and place face-up on a lightly greased baking dish. Bake for 45 minutes at 350F. Once baked, shred it with a fork.
  2. Meanwhile, measured out the sun dried tomatoes and place on a bed of paper towels to remove the oil.
  3. In a bowl or large dish, add the spaghetti squash. Top with feta, zucchini and dun dried tomato.
  4. Enjoy!
