Cucumber Greek Creamy Salad

This recipe is simple, low carb and fresh. The ricotta or Greek yogurt provide a creamy texture, while the combination of vegetables and seasonings give this dish a Mediterranean flavor. Enjoy at lunch or dinner!

Cucumber Greek Creamy Salad

Ingredients

(Serves 4)

  • ½ cup of sliced cherry tomatoes
  • 3 sliced small cucumbers
  • 2-3 tbsp of sliced red onion
  • ⅓ cup of ricotta cheese (for lower sodium, use Greek yogurt)
  • ½ tbsp of red pepper flakes
  • ½ tbsp of dried oregano
  • 1 tsp of garlic
  • ⅛ tsp of black pepper

Instructions

  1. Wash and chop the vegetables.
  2. Mix all the ingredients in a bowl.
  3. Serve and enjoy!
