Crunchy Peanut Tilapia Skillet

A simple, veggie-loaded, high protein dish! Tilapia is an inexpensive lean protein that’s versatile and easy to cook; just add colorful vegetables and peanuts for a crunch. This is a low carb, high protein, gluten free dinner or lunch recipe you can enjoy with a minimal amount of time and utensils.

Crunchy Peanut Tilapia Skillet

Ingredients

Serves 3

  • 3 wild-caught tilapia filets 
  • 1 cup of chopped spinach
  • ½ cup of chopped red cabbage
  • ½ cup of cherry tomatoes
  • ½ tbsp of coconut aminos or soy sauce
  • 1 tsp of sea salt
  • 1/8 tsp of black pepper
  • 1/8 tsp of ginger powder
  • 1 tbsp of crushed dried onion
  • 1 lime squeezed
  • 3 tbsp of peanuts

Instructions

  1. Preheat the oven to 370F.
  2. Place the tilapia in a skillet and add the lime juice and seasonings.
  3. Wash and chop all the veggies.
  4. Top the fish with veggies and peanuts.
  5. Bake for 35-40 minutes.
  6. Enjoy!
