Creamy Italian Egg Skillet

This is a simple and effortless breakfast recipe! This skillet features tomatoes, spinach, eggs and light sour cream for a creamy flavor and texture. 

Did you know the egg is considered a “perfect food” due to its ideal composition of proteins, carbs, fats and micronutrients? Not to mention that it is highly digestible by humans. Much of this nutrition is found in the yolk. While the egg whites are composed of protein and some B vitamins, the yolk contains healthy (unsaturated) fatty acids, and ALL of the vitamins and minerals with the exception of vitamin C. Not to worry though, tomatoes and basil in this recipe happen to be good sources of vitamin C. So, enjoy this recipe knowing you are getting all of your nutrients in one meal!

Creamy Italian Egg Skillet

Ingredients

Serves 1

  • 1 tomato
  • 2 eggs
  • Fresh basil leaves (to taste)
  • 2 tbsp light sour cream
  • ⅛ tsp garlic powder
  • ⅛ tsp Himalayan salt (omit for hypertension)
  • ⅛ tsp black pepper

Instructions

  1. Preheat the oven to 350F.
  2. Chop the tomato into large pieces and place in a 6-inch baking skillet.
  3. Crack the eggs into the middle of the skillet.
  4. Sprinkle the basil leaves evenly over the eggs and tomatoes. Add the sour cream in small dollops.
  5. Bake for 30-35 minutes.
  6. Let cool and enjoy!
