Cilantro Lime Sweet Potato Tacos

Perfect for lunch or dinner, these flavorful tacos are vegan and gluten free! Sweet potato is an excellent source of vitamin A, C and potassium. It is also considered a complex carb, meaning it has plenty of fiber to fill you up without spiking your blood sugar. This is a perfect healthy recipe to share with your family and friends.

Cilantro Lime Sweet Potato Tacos

Ingredients

Serves 3 tacos

  • 1 cup of diced sweet potato
  • ½ chopped bell pepper
  • ¼ cup of chopped onion
  • ¼ cup of chopped cilantro
  • 1 lime
  • ½  tsp of garlic
  • ⅛ tsp of black pepper
  • 3 soft corn tortillas

Instructions

  1. Wash and chop the vegetables. Optional: peel the sweet potato.
  2. In a non-stick skillet, start cooking the sweet potato (about 5 minutes).
  3. Add the onion and the bell pepper, garlic and black pepper, squeezed lime and cook for another 5 minutes.
  4. Add the cilantro and stir well.
  5. Heat the tortillas in the microwave for 30 seconds or in a skillet and serve them with the sweet potato mix.
  6. Enjoy!
