Cilantro Beef Skewers

Packed with protein, these skewers add a healthy, spicy kick to your weekday lunches or dinners! Using grass-fed beef tips and different produce colors, this recipe is gluten free, low carb and high protein.
Ingredients
Serves 2-4
- 1 lb. of grass-fed beef tips (extra lean)
- 5 limes
- 3 tbsp of chopped cilantro
- 1/4 tsp of black pepper
- 1 tsp of garlic powder
- 1 large zucchini
- 2 tomatoes
- 1 bell pepper
- 1 red onion
Instructions
- Preheat the oven to 350F.
- In a bowl, add the beef and seasonings, squeezed lime and mix well.
- On each skewer, alternate adding beef tip, zucchini, tomato, bell pepper and onion. Repeat until all ingredients are gone.
- Bake for 35 minutes.
- Serve and enjoy!
