Cilantro Beef Skewers

Packed with protein, these skewers add a healthy, spicy kick to your weekday lunches or dinners! Using grass-fed beef tips and different produce colors, this recipe is gluten free, low carb and high protein.

Cilantro Beef Skewers

Ingredients

Serves 2-4

  • 1 lb. of grass-fed beef tips (extra lean)
  • 5 limes
  • 3 tbsp of chopped cilantro
  • 1/4 tsp of black pepper
  • 1 tsp of garlic powder
  • 1 large zucchini
  • 2 tomatoes
  • 1 bell pepper
  • 1 red onion

Instructions

  1. Preheat the oven to 350F.
  2. In a bowl, add the beef and seasonings, squeezed lime and mix well.
  3. On each skewer, alternate adding beef tip, zucchini, tomato, bell pepper and onion. Repeat until all ingredients are gone.
  4. Bake for 35 minutes.
  5. Serve and enjoy!
