These delicious meatballs are made with chicken breast, a great source of lean protein. Traditional meatballs are made with higher fat ground beef, which increases the overall saturated fat content. Chicken has little saturated fat and is considered a complete protein, meaning it contains all 9 essential amino acids our body needs but cannot make on its own. Chicken Meatball Skillet

Ingredients

Serves 4

  • 2 large chicken breasts
  • 1 egg
  • 1 tsp Himalayan salt
  • ½ tsp black pepper
  • 1 tbsp Italian herbs
  • 1 small red onion, chopped
  • 1 orange bell pepper, chopped
  • 1 cup cauliflower
  • 1 cup broccoli
  • ½ cup organic turkey gravy

Instructions

  1. Preheat the oven to 350F.
  2. Place the chicken, egg, salt, pepper, and Italian herbs in a blender or food processor. Blend until they form a smooth paste.
  3. Use a cookie scoop, spoon, or your hands to form 16 meatballs.
  4. Place the meatballs in a cast-iron skillet or baking dish.
  5. Add the vegetables to the skillet and top with gravy.
  6. Bake for 35-40 minutes.
  7. Enjoy!
