Caprese Chicken Toast

A quick and easy lunch or dinner idea that doesn’t require any cooking! Tomatoes are a good source of lycopene, an antioxidant that is beneficial for heart health.

Meal Prep tip: It’s much easier to make lunch or dinner when you already have a lean protein, like chicken, cooked ahead of time.

Caprese Chicken Toast

Ingredients

(Serves 1)

  • ½ whole wheat English muffin
  • 2 tbsp of tomato paste
  • ¼ cup of baby spinach
  • 3 thin slices of tomato
  • ¼ cup of cooked mushrooms
  • ⅓ cup of sliced cooked chicken breast
  • 1 piece of low-fat mozzarella cheese
  • Dry parsley for garnish

Instructions

  1. Spread the tomato sauce over the English muffin.
  2. Add all the ingredients over the English muffin.
  3. Microwave or toast for 1 minute.
  4. Enjoy!
