Blueberry Lime Scones

Easy, healthy and the perfect texture to pair your sugar-free lattes, this scone recipe is high in fiber, low in sugar and high in protein as well! It works well as a snack or dessert!
Ingredients
Serves 8 Scones
- 1 cup of oat flour
- 1 cup of oats
- 1 tsp of baking soda
- ½ cup of granulated monk fruit
- 1 tbsp of vanilla extract
- zest of one lime
- 1 lime (the juice)
- ½ cup of blueberries
- ⅔ cup of sugar-free & fat-free yogurt
- 2 eggs
- ⅓ cup of almond butter
Instructions
- Preheat the oven to 350F.
- Mix all the dry ingredients in a bowl and then mix in the rest of the ingredients.
- With your hands create 8 scones and place them on a baking tray.
- Bake for 22 minutes, let them cool down and enjoy!
