Berry Protein “Cheesecake”

This is a high protein cheesecake; it’s secretly healthy and rich in antioxidants thanks to the berries. You’ll also get fiber and healthy fats from the ground flaxseed. Finally, blended cottage cheese gives it a “cheesecake” flavor with less fat and more protein.

This recipe is low carb, gluten free and high protein.

Berry Protein Cheesecake

Ingredients

Serves 1

  • 1 cup of lowfat cottage cheese
  • ⅓  cup of egg whites
  • 1 tsp of vanilla
  • 3 tbsp of ground flaxseed or coconut flour
  • 5 packets of stevia or monk fruit
  • ¼  cup of blueberries
  • ¼  cup of strawberries

Instructions

  1. Preheat the oven at 350F.
  2. Blend all the ingredients except for the strawberries and blueberries.
  3. Transfer the batter into a little baking dish and add the strawberries and blueberries on top.
  4. Bake for 25 minutes at 350F.
  5. Enjoy!
