Baked Vanilla Grapefruit

A delicious snack, breakfast or dessert! Juicy, tart grapefruit is paired with creamy nonfat vanilla Greek yogurt. Feel free to swap out regular yogurt for a dairy free version.
Ingredients
Serves 1
- 1 medium sized grapefruit
- ½ tsp of vanilla extract
- 1 packet of stevia or monk fruit
- ¼ cup fat and sugar free vanilla Greek yogurt
- A dash of ground cinnamon for topping
Instructions
- Preheat your oven at 355F.
- Drizzle the vanilla to the sliced grapefruit on top and add the stevia.
- Bake for 12 minutes, top with Greek yogurt and cinnamon.
- Enjoy!
