Baked Vanilla Grapefruit

A delicious snack, breakfast or dessert! Juicy, tart grapefruit is paired with creamy nonfat vanilla Greek yogurt. Feel free to swap out regular yogurt for a dairy free version.

Baked Vanilla Grapefruit

Ingredients

Serves 1

  • 1 medium sized grapefruit
  • ½ tsp of vanilla extract
  • 1 packet of stevia or monk fruit
  • ¼  cup fat and sugar free vanilla Greek yogurt
  • A dash of ground cinnamon for topping

Instructions

  1. Preheat your oven at 355F.
  2. Drizzle the vanilla to the sliced grapefruit on top and add the stevia.
  3. Bake for 12 minutes, top with Greek yogurt and cinnamon.
  4. Enjoy!
