Asian Quinoa Tofu Salad

This is a delicious, nutritious tofu recipe made with simple ingredients. Tofu is made from soybeans, which are high in antioxidants called isoflavones. Isoflavones are associated with a reduced risk of cancer. This plant-based recipe is packed with protein from the tofu and quinoa, making this recipe a great post-workout, lunch or dinner option!

Ingredients (serves 2)
- 1 block of organic extra firm tofu
- 1 tbsp of coconut aminos
- 1 tbsp of cornstarch
- ¼ tsp of ginger
- 1 tsp of garlic
- 1 tbsp of sugar-free maple syrup
- 1 cup of cooked quinoa
- ½ cooked chopped zucchini
- 1 cooked chopped carrot
- ¼ cup of cooked scallions
- 1 tsp of red pepper flakes
- Optional: Extra coconut aminos to serve,
Instructions
- Preheat the oven to 350F.
- Cook quinoa according to package instructions.
- While the quinoa is cooking, drain excess water from the tofu and cut into cubes.
- Transfer the tofu to a bowl, add the seasonings; coconut aminos, ginger, maple syrup, garlic and cornstarch.
- Mix well to cover the tofu entirely with the seasoning mixture.
- Transfer tofu to a baking dish and bake for 25-30 minutes.
- Chop vegetables.
- Serve with quinoa, vegetables and enjoy!
