Apple Hazelnut French Toast Casserole

A breakfast classic made lighter! This French toast casserole uses hazelnut-flavored stevia drops to provide flavor and sweetness. Sliced apple and whole wheat bread contain plenty of fiber to leave you feeling full. You’ll also be getting 19 grams of protein in one serving!

Apple Hazelnut French Toast Casserole

Ingredients

Serves 2

For the Casserole:

  • 4 slices of whole grain bread
  • ⅓  cup of egg whites
  • ⅓  cup of unsweetened almond milk
  • 1  tsp of vanilla extract
  • ¼ tsp of hazelnut stevia drops
  • 1 tsp of cinnamon
  • ½ sliced apple

For the Sugar-Free Glaze (optional):

  • ¼ cup of powdered monk fruit
  • 2 tsp of unsweetened almond milk

Instructions

  1. Preheat the oven to 350F.
  2. Slice the apple into thin pieces.
  3. Mix the egg whites, almond milk, vanilla, cinnamon and stevia drops in a bowl.
  4. Soak each slice of bread into the mix, making sure both sides are saturated.
  5. Place the soaked bread slices in a baking dish and pour over the leftover egg mix.
  6. Top with apple slices.
  7. Bake for 18-20 minutes.
  8. Meanwhile, in a small bowl, whisk together the monk fruit and 2 tsp almond milk to make a sugar free glaze.
  9. Let it cool down, top with glaze, and enjoy!
