Air Fried Chive & Dill Potatoes

These easy, flavorful, and crispy air fried potatoes are seasoned with a touch of ranch seasoning and chives. Potatoes are the most satiating (filling) carbohydrate there is – not to mention they are high in potassium – something most of us don’t get enough of. Air frying is a great way to make your favorite vegetables more exciting without the excess oil and mess. If you don’t have an air fryer, no worries – you can also bake these in the oven.
Ingredients (serves 2)
For the Potatoes:
- 1 lb of baby dutch potatoes
- 2 limes
- 1 tsp of garlic powder
- 1/2 tbsp of ranch seasoning
- ⅛ tsp of black pepper
Garnish:
- 1 tbsp of chopped fresh chives
- 1 tsp of red pepper flakes
- 1 tbsp of chopped fresh dill
- ¼ cup of plain, nonfat Greek yogurt
Instructions
- Cut the potatoes in half.
- Transfer them into a mixing bowl and sprinkle on the garlic powder, ranch seasoning, black pepper and lime juice from both limes. Mix well with your hands.
- Air fry for 25 minutes at 385 or bake for 30 minutes at 350F.
- Serve on a plate with Greek yogurt, red pepper flakes, chives and chives.
