Berry Protein “Cheesecake”

This is a high protein cheesecake; it’s secretly healthy and rich in antioxidants thanks to the berries. You’ll also get fiber and healthy fats from the ground flaxseed. Finally, blended cottage cheese gives it a “cheesecake” flavor with less fat and more protein.
This recipe is low carb, gluten free and high protein.
Ingredients
Serves 1
- 1 cup of lowfat cottage cheese
- ⅓ cup of egg whites
- 1 tsp of vanilla
- 3 tbsp of ground flaxseed or coconut flour
- 5 packets of stevia or monk fruit
- ¼ cup of blueberries
- ¼ cup of strawberries
Instructions
- Preheat the oven at 350F.
- Blend all the ingredients except for the strawberries and blueberries.
- Transfer the batter into a little baking dish and add the strawberries and blueberries on top.
- Bake for 25 minutes at 350F.
- Enjoy!
