Apple Cinnamon Frosted Rolls

These are the perfect easy and delicious healthy snacks! They’re gluten free, have no added sugar, and provide a little of your daily fiber.
Ingredients
Serves 3
For the Rolls:
- 3 sheets of rice paper
- 1 whole apple
- 1 tsp of cinnamon
- ⅛ tsp of cardamom
- 1 tsp of vanilla extract
- 4 tsp of monk fruit
Frosting:
- ½ cup of powdered granulated monk fruit
- 1 tsp of vanilla extract
- 2 tbsp of unsweetened almond milk
Instructions
- Wash and chop the apple, place it on a bowl and mix with the cinnamon, cardamom, 1 tsp vanilla extract and 4 packets of stevia.
- Microwave for 2 minutes.
- Soak the rice papers in warm water and lay them on a chopping board.
- Put a third of the apple mixture onto each rice paper.
- Roll the rice paper like a burrito.
- Air fry for 8 minutes at 380F.
- Mix ½ cup monk fruit, 1 tsp vanilla extract and 2 Tbsp almond milk for the frosting. Drizzle over the top of the rolls and enjoy!
