Apple Cinnamon Frosted Rolls

These are the perfect easy and delicious healthy snacks! They’re gluten free, have no added sugar, and provide a little of your daily fiber.

Apple Cinnamon Frosted Rolls

Ingredients

Serves 3

For the Rolls:

  • 3 sheets of rice paper
  • 1 whole apple
  • 1 tsp of cinnamon
  • ⅛ tsp of cardamom
  • 1 tsp of vanilla extract
  • 4 tsp of monk fruit

Frosting:

  • ½ cup of powdered granulated monk fruit
  • 1 tsp of vanilla extract
  • 2 tbsp of unsweetened almond milk

Instructions

  1. Wash and chop the apple, place it on a bowl and mix with the cinnamon, cardamom, 1 tsp vanilla extract and 4 packets of stevia.
  2. Microwave for 2 minutes.
  3. Soak the rice papers in warm water and lay them on a chopping board.
  4. Put a third of the apple mixture onto each rice paper.
  5. Roll the rice paper like a burrito.
  6. Air fry for 8 minutes at 380F.
  7. Mix ½ cup monk fruit, 1 tsp vanilla extract and 2 Tbsp almond milk for the frosting. Drizzle over the top of the rolls and enjoy!
