This is an easy, elegant and healthy side dish for your lunch or dinner. It’s made with simple ingredients and a lovely touch of sun dried tomatoes and low fat feta cheese. Spaghetti squash and tomatoes are high in vitamin C and antioxidants – both of which may improve inflammation in your body.
Ingredients
(Serves 4)
- ½ of cooked and shredded spaghetti squash
- 1 steamed and chopped zucchini
- ¼ cup of sun dried tomato
- ¼ cup of low fat feta cheese
- ⅛ tsp of black pepper
- ½ tsp of garlic
- 1 tbsp of dried parsley
Instructions
- For the spaghetti squash, slice it in half, remove the seeds and place face-up on a lightly greased baking dish. Bake for 45 minutes at 350F. Once baked, shred it with a fork.
- Meanwhile, measured out the sun dried tomatoes and place on a bed of paper towels to remove the oil.
