Cranberry Almond Crusted Salmon

A great way to increase the antioxidants in your diet is by including nuts, berries and seeds in your meals. In this case, a delicious combination of cranberries, almonds and salmon.
This salad is low carb, gluten free and high protein.
Ingredients
Serves 2
- 2 wild-caught salmon fillets
- 1 lime, squeezed
- 2 tbsp of crushed almonds
- 2 tbsp of dried cranberries
- 1/2 tsp of sea salt
- 1/4 tsp of black pepper
- Vegetables of choice to serve
Instructions
- Preheat the oven to 350F.
- Place the salmon in a baking tray, add the lime juice, sea salt and pepper on top.
- Top with crushed almonds and bake for 30-35 minutes.
- Serve with vegetables once baked and top with cranberries.
