Egg & Sausage Breakfast Tacos

These delicious and high-protein breakfast tacos take just a few minutes to prepare and they will keep you satisfied. Bell peppers and red onion add antioxidants and a burst of flavor to this simple meal.
Ingredients
Serves 2
- ¼ cup red onion, chopped
- ½ of 1 red bell pepper, sliced
- 1 organic sausage link
- ¼ tsp Himalayan salt
- ⅛ tsp black pepper
- ⅛ tsp garlic powder
- 1 egg
- 4 corn tortillas
- 2 tbsp cilantro, chopped
Instructions
- Place the red onion, bell pepper, and sausage in a non-stick skillet. Season with salt, pepper, and garlic powder. Cook over medium heat for 4 minutes.
- Crack the egg into the skillet and stir. Cook until the egg is fully scrambled.
- Heat 4 tortillas in the microwave for 30 seconds or on the stove.
- Serve the egg and sausage scramble in warm corn tortillas.
- Top with cilantro and enjoy!
