Papaya Cucumber Salad

This recipe is an easy, nourishing cucumber salad with papaya, a fantastic source of vitamin C. Vitamin C supports immunity, skin health, protein metabolism and is a powerful antioxidant. Cilantro, honey and feta cheese add even more flavor.

Papaya Cucumber Salad

Ingredients 

(Serves 2)

  • 2 large cucumbers
  • 3 cups of chopped papaya
  • 1 tbsp of honey or sugar alternative
  • ¼ cup of chopped cilantro
  • 2 tbsp of low-fat feta cheese

Instructions

  1. Peel and chop the cucumber and papaya. Chop the cilantro.
  2. Mix all the ingredients in a salad bowl.
  3. Serve with your favorite lean protein and enjoy!
