Cranberry Orange Pancakes

These low sodium pancakes are easy and delicious, and you’ll be getting extra fiber from the whole wheat flour, plus protein from the collagen powder. You can make them gluten-free by substituting all-purpose flour for the whole wheat flour. Cinnamon and cardamom spices, plus a delicious topping made of cranberries and orange extract, make this recipe something you’ll want to make again and again!

Cranberry Orange Pancakes

Ingredients

(Serves 7 pancakes)

For the Pancakes:

  • 1 cup of whole wheat flour or gluten-free all purpose flour
  • 2 scoops of unflavored collagen powder
  • 1 cup of low-fat milk
  • 1 whole egg
  • 1 tbsp of apple cider vinegar
  • 1 tsp of vanilla extract
  • ⅓ cup of granulated monk fruit
  • 2 tsp of cinnamon powder
  • A dash of cardamom powder

For the Cranberry Orange Jam:

  • ½ cup of cranberries
  • 3 tbsp of water
  • 1 tsp of vanilla extract
  • 6 packs of stevia
  • ½ tsp orange extract
  • ½ tsp of ginger powder

Instructions

  1. In a large bowl, combine the whole wheat or gluten-free flour, collagen powder, milk, egg, apple cider vinegar, 1 tsp vanilla extract, monk fruit, cinnamon and cardamom. Mix until just combined – some lumps are okay – to avoid over mixing.
  2. Ladle pancakes onto a greased skillet on medium heat, flipping when bubbles start to form on the outer edges. Pancakes should be golden brown.
  3. Mix the remaining ingredients for the cranberry orange topping. Microwave for 1 minute.
  4. Once all the batter is cooked, serve with topping and enjoy!
