Single Serve Pizza Quiche

A low-fat and high protein breakfast pizza that will keep you nourished and satisfied! This recipe is great for a quick breakfast or lunch and uses lower fat swaps like turkey pepperoni and low-fat feta cheese.The pepperoni, egg whites and feta provide essential protein, and you’ll also be getting some of your daily veggies in from the tomato and bell pepper. You can double or quadruple the recipe for meal prep or multiple people.

Single Serve Pizza Quiche

Ingredients

Serves 1

  • 1 whole wheat tortilla
  • ½ cup of egg whites
  • ¼ tsp of garlic powder
  • 2 slices of tomato
  • 3 slices of red bell pepper
  • 4 slices of turkey pepperoni
  • ½ tbsp of low-fat feta cheese

Instructions

  1. Wash and slice the bell pepper and tomato.
  2. In a small round baking dish, push down the tortilla as the base, top with egg whites and rest of the ingredients.
  3. Air fry for 12 minutes at 355F or bake for 20 minutes at 350F, and enjoy!
