Cilantro Lime Sweet Potato Tacos

Perfect for lunch or dinner, these flavorful tacos are vegan and gluten free! Sweet potato is an excellent source of vitamin A, C and potassium. It is also considered a complex carb, meaning it has plenty of fiber to fill you up without spiking your blood sugar. This is a perfect healthy recipe to share with your family and friends.
Ingredients
Serves 3 tacos
- 1 cup of diced sweet potato
- ½ chopped bell pepper
- ¼ cup of chopped onion
- ¼ cup of chopped cilantro
- 1 lime
- ½ tsp of garlic
- ⅛ tsp of black pepper
- 3 soft corn tortillas
Instructions
- Wash and chop the vegetables. Optional: peel the sweet potato.
- In a non-stick skillet, start cooking the sweet potato (about 5 minutes).
- Add the onion and the bell pepper, garlic and black pepper, squeezed lime and cook for another 5 minutes.
- Add the cilantro and stir well.
- Heat the tortillas in the microwave for 30 seconds or in a skillet and serve them with the sweet potato mix.
- Enjoy!
