Apple Cinnamon Ginger Tart

This is an easy, delicious and sugar-free apple tart recipe made using whole wheat tortillas as a base to increase fiber content. Fiber, found in plants, is important for regulating digestion and blood sugar levels, maintaining weight, reducing cholesterol, and helping increase feelings of fullness with meals. Women need at least 25 grams of fiber each day, and men need 38 grams/day. This tart packs a whopping 19 grams per serving!

Apple Cinnamon Ginger Tart

Ingredients

  • 1 large whole wheat tortilla
  • 2 large apples
  • 2 tsp of cinnamon
  • 1 tsp of ginger
  • ⅓ cup of granulated brown monk fruit
  • 1 tsp of vanilla extract
  • ½ cup of egg whites

Instructions

  1. Preheat the oven to 350F.
  2. Wash and chop the apples.
  3. Whisk all the ingredients, except for the tortilla and egg whites, in a bowl for 2 ½ – 3 minutes.
  4. Place the tortilla in a round pie baking dish.
  5. Top with apple mix, egg whites and bake for 18 minutes.
  6. Enjoy!
