Spicy Butter Chicken

Turn your chicken into this easy, show-stopping Indian inspired dish, using a simple process and wholesome ingredients. Did you know that traditional Indian spices – like turmeric and garam masala – are rich in antioxidants? Garam masala is typically a mixture of the following spices: black pepper, cardamom, cinnamon, cloves, coriander, cumin and nutmeg. These spices have anti-inflammatory properties. Turmeric is high in curcumin which is also a powerful antioxidant. Enjoy this low-carb, gluten free chicken recipe!

Ingredients
Serves 5
- 3 lb of chicken breasts
- ¼ chopped large onion
- ½ cup of chopped cilantro
- 2 tsp of garam masala powder
- 1 tsp of turmeric powder
- 1 tsp of garlic
- 1 tbsp of dried onion flakes
- ½ tbsp of red pepper flakes
- 1 cup of tomato puree
- 1 cup of unsweetened coconut milk
- ½ cup of brewed ginger tea (unsweeteened)
Instructions
- Cut the chicken into 1×1 inch cubes.
- Place chicken in your pressure cooker (Insta Pot) along with the rest of the ingredients.
- Stir well and incorporate all the ingredients with a spoon.
- Pressure cook in HIGH for 19 minutes. Or cook on the stove top covered for 18-20 minutes on medium heat.
- Serve with rice, baked potatoes or salad. Enjoy!
