Asian Quinoa Tofu Salad

This is a delicious, nutritious tofu recipe made with simple ingredients. Tofu is made from soybeans, which are high in antioxidants called isoflavones. Isoflavones are associated with a reduced risk of cancer. This plant-based recipe is packed with protein from the tofu and quinoa, making this recipe a great post-workout, lunch or dinner option!

Asian Quinoa Tofu Salad

Ingredients (serves 2)

  • 1 block of organic extra firm tofu
  • 1 tbsp of coconut aminos
  • 1 tbsp of cornstarch
  • ¼ tsp of ginger
  • 1 tsp of garlic
  • 1 tbsp of sugar-free maple syrup
  • 1 cup of cooked quinoa
  • ½ cooked chopped zucchini
  • 1 cooked chopped carrot
  • ¼ cup of cooked scallions
  • 1 tsp of red pepper flakes
  • Optional: Extra coconut aminos to serve,

Instructions

  1. Preheat the oven to 350F.
  2. Cook quinoa according to package instructions.
  3. While the quinoa is cooking, drain excess water from the tofu and cut into cubes.
  4. Transfer the tofu to a bowl, add the seasonings; coconut aminos, ginger, maple syrup, garlic and cornstarch.
  5. Mix well to cover the tofu entirely with the seasoning mixture.
  6. Transfer tofu to a baking dish and bake for 25-30 minutes.
  7. Chop vegetables.
  8. Serve with quinoa, vegetables and enjoy!
