Vanilla Cinnamon & Pear Oatmeal Bars

These baked oats are fiber-rich, sugar-free and delicious! Did you know that oats are high in soluble fiber – a type of fiber that can help lower cholesterol? Not to mention fiber is beneficial for your gut health. Enjoy these tasty oat bars as your breakfast, snack or dessert!
Ingredients
Makes 9 bars
- 1 cup of rolled oats
- 1 cup of oat flour
- 2 tsp of cinnamon
- 1 tsp of baking powder
- ⅔ cup of stevia or granulated monk fruit
- 1 tsp of vanilla extract
- ⅓ cup of almond butter
- 1 whole egg
- ½ cup of egg whites
- 1 medium pear
Instructions
- Preheat the oven to 350F.
- Slice the pear.
- Mix all dry ingredients in a bowl and then mix in the wet ingredients until fully incorporated. Save some of the pears for topping.
- Transfer the batter into an 8×8 baking dish.
- Top with remaining sliced pears.
- Bake for 30 minutes, let them cool down and enjoy!
