Protein Apple Pie Rolls

This high protein dessert is an easy twist on apple turnovers! If you eat dairy, plain nonfat Greek yogurt is a great source of lean protein. One cup of yogurt packs 23 grams of protein! Ingredients
Makes 4 rolls
- 4 whole wheat tortillas
- ½ cup of unsweetened applesauce
- 1 cup of plain, nonfat greek yogurt
- ⅓ cup of egg whites
- 1 tsp of cinnamon
- 3-4 packs of stevia or monk fruit
- 1 tbsp of vanilla powder (1 tsp of vanilla extract)
- 2 tbsp of unsweetened coconut
- 2 tbsp of crushed almonds
Instructions
- Preheat the oven to 350F.
- Mix the Greek yogurt with applesauce, egg whites, stevia and cinnamon.
- Spoon some of the mixture in the center of each tortilla. Roll like a burrito. Save some of the yogurt mixture for topping.
- Place rolls in a baking dish.
- Top with shredded coconut and almonds.
- Top with the rest of the yogurt mix and bake for 30-35 minutes.
- Enjoy!
