This skillet features tomatoes, spinach, eggs and light sour cream for a creamy flavor and texture.&nbsp;<\/p>\n\n\n\n<p>Did you know the egg is considered a \u201cperfect food\u201d due to its ideal composition of proteins, carbs, fats and micronutrients? Not to mention that it is highly digestible by humans. Much of this nutrition is found in the yolk. While the egg whites are composed of protein and some B vitamins, the yolk contains healthy (unsaturated) fatty acids, and ALL of the vitamins and minerals with the exception of vitamin C. Not to worry though, tomatoes and basil in this recipe happen to be good sources of vitamin C.
